Buttery Yeast Spritz Cookies

In my never ending search for new cookie press recipes I fell upon these Buttery Yeast Spritz Cookies. Yeast in cookies? Truly a different ingredient and I have to say, these cookies are very light, very tender, and have a huge butter flavor! I think this recipe is very close to bakery style cookies, and the sprinkling of colored sugar adds a nice little extra sweet touch. So, if you'd like to add a new cookie recipe to your list of things to try... How about bringing the cookie press out of storage, choosing a flower disc, and baking up a colorful spring bouquet:@)

This is a nice dough that sticks to the cookie sheets very well, and the recipe is easily cut in half:@)

Buttery Yeast Spritz Cookies-from Allrecipes
1 envelope yeast= 2 1/4 tsp yeast
2 Tblsp warm water
2 C butter, softened
1 C sugar
2 egg yolks
1 tsp vanilla-optional but recommended
4 C A/P flour
  1. Dissolve yeast and water in small bowl, set aside.
  2. Cream butter and sugar in large bowl.
  3. Add yolks, yeast and vanilla if using. Mix well.
  4. Add flour, mix until combined. It may look crumbly, let sit for a minute or two and press together with your hands.
  5. Load cookie press, press dough onto cool, ungreased cookie sheets.
  6. Decorate with sugar or sprinkles if desired.
  7. Bake at 400 degrees for 7-11 minutes or until slightly brown on bottom.
  8. Remove cookies to cookie rack to cool.
